I beleive the origin of the term "redneck" was a derogatory term for Irish laborers in New York prior to the Civil War, because as Ole stated your neck gets red doing stoop labor. Which at that time was all the Irish were considered fit for. To quote Charlie Daniels "a redneck aint nuthin' but a workin' man".
