I agree that y'all is the correct spelling, as it's a contraction of you and all. As pointed out before, the apostrophe is to signify the deletion of letters in a contraction, such as in don't, didn't, or can't. Ya'll, doesn't make any sense in that respect, and is even shown as being misspelled by my browser's spell check.
