Here is one about Civil War horses. (Published in 2011). I've never seen it, so I don't know if its any good or not.

There is also a book devoted to Traveller himself written by Richard Adams. Apparently, its a whimsical narrative of the war's events as told by the horse. Its cover is shown on the page on the link above.
