Doc, Hickory Farms may have changed in the many years since, but there was a time it was my regular holiday employment (many, many years ago). They were fanatical about expiration dates. At midnight of the ex.date it was gone. It was supposed to be gone into the garbage, but it was actually gone into my car. Had to buy a spare fridge to keep all the cheese in. You'd be surprised how long it lasts after the expiration date. Best cheese I ever tasted (and I'm talking in England, Scotland, France, US, etc) was called Mont St. Benoit. Made by a bunch of monks in a monastery in Canada. I googled it and see that their still making it, but can't find anyone who will ship it to the US. Forgive me, I wax poetically about cheese...

Now you have me. I need to go finish off that wheel of colby. Love good cheese. Love bad cheese. Won't pay for the good stuff so I buy the cheap stuff and chow down. Some days, that's all I'll eat. Do not say figs out loud in my presence, Doc. Some years back we visited Dear One's uncle in Phoenix. As we were leaving, he invited us to take a fig from his precious tree. About 45 minutes west of Phoenix, I was looking for who I had to kill to find a bathroom. The H-test on Bikini came close. Ole

Have to agree there is nothing better than a good mature cheese. It would be a very rare thing indeed for any cheese to go past its expiry date in our house, but, we find that if you throw out the packaging with the date on and re-wrap your cheese then there is no longer an expiry date, problem solved! Keeps for as long as you can resist eating it.
