I'd recommend Carol Reardon's "Pickett's Charge in History and Memory" After discussing the charge, she explains how memory of the charge evolved over time.

I would say Earl Hess's "Pickett's Charge: The Last Attack at Gettysburg" (UNC Press, 2000) is the best.

I didn't know Hess had written a book on Pickett's Charge! He's one of my favorites. I'll have to go check it out!

Not just about the charge, but I thought Longacre's bio of Pickett was a well done book.
